In the diploma thesis, the initial hypothesis was established that a company with high-quality production, targeted marketing and rational cost management can ensure economic sustainability and long-term growth (coverage and profit). The idea was verified with the help of a business plan. Through research and market analysis (surveying restaurants representing potential customers and structured interviews with current microgreens growers), growing demand was identified, especially among restaurants looking for locally grown quality and fresh produce. The company's economics are based on an initial focus on four types of microgreens (broccoli, peas, radish and sunflower) that are cost-effective to grow and popular with customers. The financial plan includes targeted revenue growth and gradual expansion of production. An analysis of costs and revenues has also been prepared, which proves that the company already achieves positive business in the first year, and the volume of revenues is expected to increase by 128 % in five years. The key to the successful operation of the company is that it acquires customers on time and produces quality produce. It has been shown that the establishment of a company for the production and marketing of microgreens is economically justified and that the company can ensure long-term growth and positive business result.
