Abstract
Lipidno peroksidacijo polinenasičenih lipidov v modelnih membranah (liposomih) je mogoče uspešno preprečiti z uporabo antioksidantov. V eksperimentalnem delu magistrske naloge smo pripravili liposome iz fosfolipida z večkrat nenasičenimi maščobnimi kislinami. Pripravili smo serije liposomov z dodatkom različnih koncentracij treh izbranih flavonoidov. Sledila je oksidacija liposomov v atmosferi kisika. Analizirali smo vsebnost lipidov pred in po oksidaciji ter pri različnih časih izpostavljenosti kisiku. Kvantitativno analizo smo izvedli s pomočjo metode UHPLC z detektorjem nabitih aerosolov (CAD)

Title:Quantitative analysis of lipid peroxidation of polyunsaturated lipids in the presence of selected flavonoids
Abstract:
The lipid peroxidation of polyunsaturated lipids in model membranes (liposomes) can be successfully prevented by using antioxidants. In the experimental part of the master's thesis, we prepared liposomes from phospholipids with multiple polyunsaturated fatty acids. We prepared series of liposomes with the addition of various concentrations of three selected flavonoids. Subsequently, the oxidation of liposomes in oxygen atmosphere followed. We analyzed the lipid content before and after oxidation and at different times of exposure to oxygen. Quantitative analysis was performed using the UHPLC method with a charged aerosol detector (CAD).
