Buckwheat honey is one of the less known types of Slovenian honey so the aim of this graduation thesis was to determine some of its physico-chemical parameters and to update the existing buchwheat honey database. Ten samples of buckwheat honey from Slovenian beekeepers were analysed on water content, electrical conductivity, pH value, free acid, lactone and total acid contents, diastase number, total phenolic content, antioxidant activity and color parameters L*, a* and b*. Obtained results were compared with prescribed values in Honey Regulation (2011) and with results from other studies. The Slovenian beekeepers produce high quality buckwheat honey. With the exception of one honey sample whose electrical conductivity was too high, all honey samples complied with the Honey Regulation regarding water content, electrical conductivity, free acids and diastase number. The content of total phenolic compounds in the analysed buckwheat honey samples ranged from 272.1 to 510.4 mgGA/kg, and the antioxidant activity, expressed as % of inhibition, varied between 14.3 and 68.2 %. Samples of buckwheat honey varied in colour, darker honey samples had a higher total phenolic content.
