Abstract
V zaključni nalogi je bil obravnavan vpliv debeline rezin sadja na proces sušenja z liofilizacijo. Proces liofilizacije je bil izveden na štirih vrstah sadja, pri čemer je bilo vsako sadje pripravljeno v treh različnih debelinah rezin: 3 mm, 6 mm in 10 mm. Za vse vzorce sadja so bili uporabljeni enaki pogoji sušenja, kar je omogočilo neposredno primerjavo vpliva debeline rezin na vsebnost vlage v vzorcih sadja pri procesu liofilizacije. Po končanem procesu liofilizacije so bili vzorci sadja dodatno sušeni v vakuumskem sušilniku, s čimer je bila odstranjena preostala vlaga. Vzorci so bili stehtani pred in po liofilizaciji ter ponovno po vakuumskem sušenju. Na podlagi izmerjenih mas je bila določena vsebnost odstranjene vlage po liofilizaciji in po dodatnem vakuumskem sušenju. Rezultati so pokazali, da debelina rezin vpliva na učinkovitost odstranjevanja vode. Pri tanjših rezinah sadja je bilo med liofilizacijo izločeno več vode kot pri debelejših rezinah sadja.

Title:Influence of fruit slice thickness on lyophilization drying process
Abstract:
This thesis examined the effect of fruit slice thickness on the freeze-drying process. The freeze-drying process was carried out on four types of fruit, with each fruit prepared in three different slice thicknesses: 3 mm, 6 mm, and 10 mm. Identical drying conditions were applied to all fruit samples, enabling a direct comparison of the effect of slice thickness on moisture content during freeze-drying. Following the freeze-drying process, the fruit samples underwent additional drying in a vacuum dryer to remove residual moisture. The samples were weighed before and after freeze-drying, as well as after the vacuum drying stage. Based on the measured masses, the amount of moisture removed was determined for both the freeze-drying and the subsequent vacuum drying phases. The results indicated that slice thickness influences the efficiency of water removal; a greater amount of water was removed during freeze-drying from thinner fruit slices than from thicker ones.
