Podatkovni sklop vsebuje raziskovalne podatke, povezane z znanstvenim člankom Use of HPLC-MS to Determine the Loss of Metabolites in Apple Juices under Different Storage Conditions. Vsebuje surove površine kromatografskih vrhov, preračune s standardnimi krivuljami, podatke o sladkorjih, organskih kislinah, askorbinski kislini, fenolnih spojinah, skupnih fenolnih skupinah, TAPC in barvnih parametrih jabolčnega soka dveh sort jabolk: rdečemesnate sorte ‘Baya Marisa’ in belomesnate sorte ‘Golden Delicious’ (‘Zlati Delišes’). Podatki se nanašajo na sveže stiskan sok, sok po pasterizaciji in pasteriziran sok po enoletnem skladiščenju v različnih pogojih. Raziskava je bila izvedena na plodovih iz intenzivnega sadovnjaka v Zdolah v jugovzhodni Sloveniji, analize pa so bile izvedene na Univerzi v Ljubljani. Podatki so organizirani v enajst Excel datotek.

Abstract

The dataset contains research data associated with the scientific article Use of HPLC-MS to Determine the Loss of Metabolites in Apple Juices under Different Storage Conditions. It includes raw chromatographic peak areas, calculations based on calibration standards, data on sugars, organic acids, ascorbic acid, phenolic compounds, total phenolic groups, TAPC, and apple juice color parameters for two apple cultivars: the red-fleshed cultivar ‘Baya Marisa’ and the white-fleshed cultivar ‘Golden Delicious’. The data cover fresh pressed juice, pasteurized juice, and pasteurized juice after one year of storage under different household storage conditions. The study was conducted using fruits collected from an intensive orchard in Zdole, southeastern Slovenia, while analyses were performed at the University of Ljubljana. The dataset is organized into eleven Excel files.
