Abstract
Podatkovni sklop vsebuje raziskovalne podatke, povezane z znanstvenim člankom Using HPLC-MS/MS to Determine the Loss of Primary and Secondary Metabolites in the Dehydration Process of Apple Slices. Vključuje surove instrumentalne površine, standarde, preračune koncentracij, preračune pretvorjene v mg/kg, izračune skupin fenolnih spojin, podatke o suhi snovi in končne pregledne tabele za dehidrirane jabolčne krhlje sort ‘Baya Marisa’ in ‘Golden Delicious’ (‘Zlati Delišes’). Analizirani so bili sladkorji, organske kisline, askorbinska kislina, posamezne fenolne spojine ter skupna vsebnost analiziranih fenolnih spojin (TAPC). Podatki primerjajo olupljene in neolupljene dehidrirane jabolčne krhlje. Raziskava je bila izvedena na plodovih iz intenzivnega sadovnjaka v Zdolah v jugovzhodni Sloveniji, analize pa so bile izvedene na Univerzi v Ljubljani. Podatki so organizirani v šest Excel delovnih zvezkov.

Using HPLC-MS/MS to determine the loss of primary and secondary metabolites in the dehydration process of apple slices : research data underlying the article
Abstract:
The dataset contains research data associated with the scientific article Using HPLC-MS/MS to Determine the Loss of Primary and Secondary Metabolites in the Dehydration Process of Apple Slices. It includes raw instrumental peak areas, standards, concentration calculations, calculations converted to mg/kg, phenolic group calculations, dry matter data, and final summary tables for dehydrated apple slices of the cultivars ‘Baya Marisa’ and ‘Golden Delicious’. Sugars, organic acids, ascorbic acid, individual phenolic compounds, and total analyzed phenolic content (TAPC) were analyzed. The dataset compares peeled and unpeeled dehydrated apple slices. The study was conducted using fruits collected from an intensive apple orchard in Zdole, southeastern Slovenia, while analyses were performed at the University of Ljubljana. The dataset is organized into six Excel workbooks.
