Abstract
V tem diplomskem delu raziskujem uporabniške izkušnje v Michelinovih restavracijah, ki sovpadajo s konceptom fine dininga, z uporabo kvalitativne tematske analize ocen obiskovalcev na TripAdvisorju. Obiskovalci teh restavracij plačajo znatno višje cene, zato pričakujejo nadstandardno izkušnjo z izjemno kakovostjo hrane, inovativnostjo, vrhunsko postrežbo, ambientom in umetnostjo. Raziskovalno vprašanje, na katerega se osredotoča to delo, je: »Kateri elementi visoke kulinarike vplivajo na oceno obiskovalcev njihovih izkušenj v slovenskih Michelinovih restavracijah?« V tem diplomskem delu so obravnavani različni vidiki gastronomije, vključno s slow foodom, nouvelle cuisine in haute cuisine, ter opravljena analiza ocen obiskovalcev na TripAdvisorju, da bi razumeli dejavnike, ki vplivajo na izkušnje gostov. S tematsko analizo uporabniških izkušenj sem prišla do ugotovitve, da gostje slovenskih Michelinovih restavracij ocenjujejo svojo izkušnjo na podlagi petih ključnih elementov: postrežba, okusi jedi, ponudba pijač, ugled restavracije in chefa ter lokalnost sestavin. Izmed teh petih je kakovostna postrežba najpomembnejša, saj pripomore k zvestobi gostov, vendar pa tudi pomen ostalih štirih elementov ni zanemarljiv. Skrbno izbrane kombinacije okusov jedi in pijač, ki se jih Michelinovi chefi trudijo obogatiti predvsem z lokalnimi sestavinami, pripomorejo k promociji slovenske kulinarike na globalni ravni, razvijajo slovensko kulinarično identiteto in skrbijo za naše kulturno izročilo.

Title:User experience in Slovenian Michelin star restaurants – analysis of user comments on TripAdvisor
Abstract:
In this thesis, I explore user experiences in Michelin-starred restaurants that align with the concept of fine dining, using qualitative thematic analysis of visitor reviews on TripAdvisor. Visitors of these restaurants pay significantly higher prices, so they expect an exceptional experience with outstanding food quality, innovation, top-notch service, ambiance, and art. The research question this thesis focuses on is: "Which elements of haute cuisine influence visitors' evaluation of their experiences in Slovenian Michelin-starred restaurants?" This thesis addresses various aspects of gastronomy, including slow food, nouvelle cuisine, and haute cuisine, and conducts an analysis of visitor reviews on TripAdvisor to understand the factors influencing guest experiences. Through thematic analysis of user experiences, I found that guests of Slovenian Michelin restaurants evaluate their experience based on five key elements: service, flavours of the dishes, beverage selection, the reputation of the restaurant and chef, and the use of local ingredients. Among these, high-quality service is the most important factor, as it enhances guest loyalty, but the significance of the other four elements should not be overlooked. Carefully selected combinations of food and beverage flavours, which Michelin chefs strive to enrich primarily with local ingredients, contribute to the promotion of Slovenian cuisine on a global level, develop Slovenian culinary identity, and preserve our cultural heritage.
