Abstract
Svetovna populacija narašča in z njo potreba po hrani in visoko kakovostnih beljakovinah. Reja živali, ki so glavni vir visoko kakovostnih beljakovin v svetu, predstavlja veliko obremenitev za okolje. Dobro alternativo živalskim beljakovinam bi lahko predstavljali insekti. Vsebujejo veliko kakovostnih beljakovin ter drugih hranil, njihova vzreja pa zahteva manj surovin in je okolju bolj prijazna. Uživanje insektov lahko predstavlja tudi potencialno tveganje. Da bi zmanjšali negativne dejavnike in povečali pozitivne, pa je pomemben način obdelave insektne biomase. Obetavno možnost predstavlja biotehnološka obdelava.

Title:
Insects as a source of nutrients and bioactive compounds.
Abstract:
The world population is growing rapidly, and with it, the need for food and high-quality protein. Livestock breeding, which is the main source of high-quality protein globally, has a significant environmental impact. Insects may represent a good alternative to animal protein. They contain a large proportion of quality protein and other nutrients while having low maintenance costs and environmental impact. The use of insects in food can pose potential risks. In order to reduce these risks and amplify positive aspects, it is important to choose the right kind of processing. Biotechnological approaches may be a promising option for insect biomass processing.
