Abstract

Title:Perception of food additives among Slovenian consumers
Abstract:
We analysed the perception of food additives among Slovenian consumers.. For the purpose of the task, we used a questionnaire, which was divided into several content-related sets, such as shopping habits, perception of additives, knowledge in the field of additives. The results were statistically analyzed and it was determined whether there were statistically significant differences in the answers depending on gender, age, education and region of residence. We found that 65,1 % of respondents were concerned or very concerned about the use of additives in food. The survey found that almost 90 % of respondents believe that additives pose a health risk. Perceptions of different categories of additives were different. The lowest level of concern was occupied by antioxidants with an average value of 3,27 on a 5-point scale, and the highest level of concern was occupied by aroma enhancers with an average value of 4,08. The perception of different categories of additives depends on the age of the respondents, where the younger ones are less worried or they accept additives better than the elderly. With our research, we can confirm that the perception of additives depends on age and partly on the level of education, as the more educated are less concerned than those with a lower level of education. Our research did not confirm that the perception of additives depends on gender, region of home, or the presence of children in the household.
