Abstract
Aflatoksin B1 (AFB1) je strupen sekundarni presnovek nekaterih sevov plesni rodu Aspergillus, ki zaradi mnogih škodljivih lastnosti predstavlja resen problem za zdravje ljudi. Poleg tega povzroča velike ekonomske izgube v kmetijstvu in živilstvu. AFB1 najdemo v številnih živilih kot so koruza, riž, drevesni oreščki, arašidi, in suho sadje. Lahko se tvori pred ali med skladiščenjem. Učinkovit način nadzora AFB1 je ustrezen način pakiranja živila. Študije so pokazale, da so nekateri polimerni embalažni materiali dobra bariera za pline in vlago, ki sta glavna dejavnika, ki vplivata na rast plesni. Med te embalažne materiale štejemo polietilen-laminiran aluminij, etilen vinil alkohol, polipropilen in druge materiale. Učinkovitost različnih materialov proti tvorbi AFB1 je boljša z dodatkom eteričnih olj in aktivnih spojin. Zaradi okolju prijaznih lastnosti v zadnjem času vse bolj prihajajo v veljavo naravni užitni premazi za živila, kot sta hitozan in želatina s karboksimetil celulozo, ki sta prav tako učinkovitejša z dodatkom eteričnih olj. Tvorbo AFB1 lahko upočasnimo tudi s pakiranjem v atmosfero s spremenjeno plinsko sestavo (MAP).

Title:Effect of packaging on aflatoxin B1 synthesis in foods
Abstract:
Aflatoxin B1 (AFB1) is a toxic secondary metabolite synthesized by different Aspergillus strains. Its harmful properties represent a serious problem to human health. Additionally, it causes serious economic damage in agriculture and food industry. AFB1 can be found in corn, rice, tree nuts, peanuts and dried fruits and can be produced before or during storage. An effective way to control AFB1 in foods is choosing a suitable method for packaging. Some of the polymer materials represent a barrier for gases and moisture, the major factors that have influence on growth of molds. Such polymers are polyethylene-laminated aluminium, ethylene vinyl alcohol, polypropylene and other materials. The effectiveness of different materials against the formation of AFB1 can be increased by adding essential oils and other active compounds. Edible food coatings like chitosan and carboxymethyl cellulose-gelatin film have recently become popular due to their environmentally friendly properties which also become more effective by addition of essential oils. The synthesis of AFB1 can be controlled by modified atmosphere packaging (MAP) as well.
