Abstract
Kava ima velik pomen v različnih družbah današnjega sveta, načini pitja kave in priprave le-te pa se razlikujejo. Diplomsko delo se osredotoča na nove načine priprave in uživanja kave v Ljubljani. Skozi polstrukturirane intervjuje, z opazovanjem z udeležbo in anketo raziskuje, ali so se tudi pri nas uveljavili globalni trendi na področju priprave in pitja kave. Rezultati raziskave so pokazali, da ima kava pomembno mesto v vsakdanjem življenju, saj za nekatere strukturira dan, je sredstvo druženja in jutranji ritual. Načini, kako kavo pripravljajo, pa se razlikujejo predvsem glede na različne starostne skupine. Starejše generacije ostajajo zveste turški kavi, medtem ko mlajši sogovorniki uporabljajo novejše in tuje aparate za pripravo kave, kot so kafetiera, aparat za pripravo espressa, french press, filter kava, instant kava. Hkrati pa so tudi večji privrženci kave za s sabo, avtomatov za kavo, kavnih alternativ in kavnih verig, kot je Starbucks. Pri mlajših generacijah se je skozi analizo opazilo, da imata odgovorno potrošništvo in pravična kava čedalje večji pomen. Raziskava se tudi osredotoča na kavarne in družbeni pomen le-teh. Skozi zgodovino se je sicer pomen kavarn tudi v slovenskem prostoru spreminjal, vendar sta se ohranili dve temeljni značilnosti pitja kave v kavarnah, in sicer kava kot ključna pijača, ki strukturira dan ter pomeni ritual, in družbena interakcija, ki jo omogoča.

Title:Modern ways of preparing and drinking coffee in Ljubljana: Establishing global trends
Abstract:
Coffee has a great importance in different societies of modern world. The ways it is prepared and brewed vary all over the world. The undergraduate thesis focuses on new ways of preparing and enjoying coffee in Ljubljana. Through semi-structured interviews, participatory observation and a survey, it explores whether global trends in coffee brewing and drinking have also taken place in Slovenia. The results of the research show that coffee has an important place in everyday life. For some it structures their day, is a mean of socializing, and a morning ritual. How coffee is made differs in different age groups. Older generations remain loyal to Turkish coffee; while younger interlocutors use newer and foreign modes of preparing coffee such as cafeteria, espresso machine, french press, filter coffee, instant coffee. At the same time, they are also more inclined to buy coffee to go, use coffee vending machines, alternatives to coffee and coffeeshop chains such as Starbucks. Through analysis it’s been noted that younger generations are more responsible consumers and are more likely to buy fair trade coffee. The research also focuses on cafés and their social importance. Throughout history, the importance of cafés has varied, but two fundamental characteristics have been preserved, namely coffee as the key drink that structures the day and the social interaction it enables.
