Pridelava črnega bezga (Sambucus nigra L.) in njegove za zdravje škodljive in koristne snovi

Abstract
Črni bezeg je rastlina, ki se po mojem mnenju premalo uporablja v slovenski pridelavi in predelavi. S tem delom smo želeli narediti pregled načina in prednosti pridelave črnega bezga. V naših krajih ima veliko perspektive, ker pridelka ne ogroža pozeba, saj rastlina cveti v mesecu juniju. Rastlina vsebuje številne bioaktivne snovi, ki še niso povsem raziskane. Perspektiva v pridelavi bezga za zdravstvene namene je prav gotova najzanimivejša in najbolj donosna. Antocianini naj bi s svojimi antioksidativnimi sposobnostmi lahko pomagali pri zdravljenju raka. Živimo v času, ko je izvor hrane ter njenih dodatkov zelo pomemben in tu ima črni bezeg veliko prednosti. V živila in pijače ga lahko dodajamo zaradi barvil ali zaradi izboljšave okusov. Ugotovili smo, da lahko pri pridelavi črnega bezga koristimo cvetove in plodove. Cvetovi so najbolj perspektivni zaradi glikozidov kvarcetina, plodovi pa zaradi antocianinov, vse snovi naj bi imela zdravilen učinek, kar pa je potrebno še bolj raziskati. Sambunigrin ne predstavlja nevarnosti, če plodove pred uživanjem termično obdelamo. Ugotovili pa smo tudi, da za večjo vsebnost željenih snovi potrebujemo optimizirati osvetljenost rastline. S pridelavo in predelavo črnega bezga, bi lahko oživili podeželje, preprečili izseljevanje, odprli nova delavna mesta in potrošnikom ponudili bolj zdravo hrano.

Title:Production of black elderberry (Sambucus nigra L.) and its helth harmful and beneficial substances
Abstract:
Black elderberry is a plant that is not used enough in Slovenian production and processing. With this diploma thesis, we wanted to review the way and benefits of growing elderberry. There is a lot of perspective in our country because the crop is not threatened by frost, due to the plant blooming season wich is in June. The plant contains many bioactive substances that have not yet been fully researched. The perspective of producing elderberry for medical purposes is certainly the most interesting and the most profitable. It is believed that anthocyanins, with their antioxidant capabilities, can help treat cancer. We live in a time when origins of food and it additives is very important. It can be added to foods and beverages for coloring or flavoring purposes. In elderberry production we can use flowers and fruits. The flowers are the most promising due to the quercetin glycosides. The fruits due to anthocyanins. All of these substances are said to have a healing effect, which needs further researches. Sambunigrin does not pose a risk if the fruits are thermally treated before consumption. We have also found that to increase the content of the desired substances, we need to optimize the illumination of the plant. By cultivating and processing elderberry, we could revitalize the countryside, prevent emigration, create jobs and offer healthier food for consumers.
