'Chardonnay is a well known grapevine which originated in France. This grapevine can be found in Slovenia as well as the rest of the world. But the production of this grape is changing on behalf of climate change. The term climate change is used when describing irregular weather patterns, which are caused by human interaction. Climate change impacts the distribution of rainfall, air temperature, hail and frost. This new environment is a problem for winegrowers and winemakers, because they will have to adapt the process of growing grapes and winemaking practices. A 35 % deficit irrigation water showed a decrease in yield of the sort ‘Chardonnay’ by 9 %. With some practices like defoliation and grape thinning, we can also affect the chemical composition of grapes. Defoliation of the sort ‘Chardonnay’ led to an increase of the concentration of residual sugars by 8,1 %, while the concentration of total titratable acids decreased by 23,5 %. An important factor is also the timing of harvest. Premature harvest leads to a wine with a smaller amount of alcohol, but if the harvest is done during the night where the temperatures are lower, a more pleasant aroma of wine is expected. All of these techniques can be applied to make wine from the sort ‘Chardonnay’ even in a warmer environment.
