Abstract
Namen magistrske naloge je bil razvoj in izdelava heterogenega dvofaznega sistema brez oz. z uporabo minimalne količine klasičnega emulgatorja, vrednotenje fizikalno-kemijske stabilnosti takšnih sistemov, določanje velikosti, porazdelitve in oblike kapljic pod optičnim mikroskopom, ter merjenje vrednosti pH. Izdelali smo dva različna heterogena sistema, emulzije in predemulzijske praške. Vzorci so imeli različne deleže in sestavo notranje ter zunanje faze. Opazovali smo, kakšen vpliv ima uporaba močljivca (Tween 80) in zgoščevala (ksantanski gumi, metilceluloza) v disperznem sistemu. Najpomembnejša pa je bila izbira primernih trdnih delcev, ki so ključni pri stabilizaciji takšnih sistemov.

Title:
Stabilisation of a biphasic heterogenous system (oil/water) without the use of emulsifiers
Abstract:
The aim of this master thesis was to develop heterogeneous system with minimal use of emulsifiers to value physical-chemical stability, to define size, distribution and shape of droplets under optical microscope and to quantify pH values. For that reason, we have made two heterogeneous systems; emulsions and powders. Emulsifier, polymer thickeners and solid particles in different combinations and ratios have been used.
