Abstract
V okviru magistrske naloge smo analizirali vpliv izbranih sintetičnih in biogenih aminov na tvorbo primarnih in sekundarnih produktov oksidacije v lanenem olju in v modelnem lipidnem sistemu, ki je vseboval gliceril trioktanoat in metil linolenat. V olje ter sintetično lipidno mešanico smo dodajali heksilamin, triheksilamin, α-tokoferol, γ-tokoferol, spermin in spermidin ter analizirali njihov vpliv na oksidacijo. Pripravljene vzorce smo inkubirali pri temperaturi 60 oC ter v določenih časovnih intervalih določali vsebnost peroksidov, nastanek konjugiranih dienov in trienov, stabilnost karotenoidov in tokoferolov. Heksilamin in triheksilamin sta imela antioksidativni učinek, saj je oksidacija potekala počasneje kot v kontrolnih vzorcih. Dodatek α-tokoferola in γ-tokoferola v laneno olje je rezultiral v prooksidativnem učinku. Biogena amina spermin in spermidin sta imela najmočnejši antioksidativni učinek od vseh uporabljenih antioksidantov. Učinkovito sta zavirala nastanek primarnih in sekundarnih produktov oksidacije in upočasnjevala oksidativno razgradnjo karotenoidov. Tako v olju kot v modelnem sistemu sta tudi upočasnila oksidacijo tokoferolov. Učinek spermina in spermidina v območju od 0,1 do 1 mmol/kg je bil koncentracijsko odvisen. Spermin, ki ima večje število amino skupin, je imel bistveno večji antioksidativni učinek kot spermidin.

Title:Influence of synthetic and biogenic amines on the oxidation of vegetable oils
Abstract:
Within the master thesis the influence of synthetic and biogenic amines on the formation of primary and secondary products of lipid oxidation in plant oils and model lipid systems was evaluated. Linseed oil was used, as also the mixture of glyceryl trioctanoate and methyl linolenate. Hexylamine, trihexylamine, α-tocopherol, γ-tocopherol, spermine and spermidine were added into oil and mixture of synthetic lipids in order to evaluate their influence on oxidation. Samples were incubated at 60 oC and after chosen time intervals peroxide values, conjugated dienes and trienes were determined. Stability of carotenoids and tocopheroles was also assessed. Hexylamine and trihexylamine had an antioxidant effect, as oxidation was slower than in control samples. Addition of α-tocopherol and γ-tocopherol into the linseed oil resulted in prooxidant effect. Biogenic amines spermine and spermidine had the strongest antioxidative effect compared to other tested antioxidants. These amines effectively inhibited the formation of primary and secondary products of oxidation and also slowed down the degradation of carotenoids. Spermine and spermidine stabilized tocopherols in oil and model systems. The effect of spermine and spermidine in the range of 0.1 to 1 mmol/kg was concentration dependent. Spermine, which has a larger number of amino groups, has higher antioxidant effect than spermidine.
