Animal transport has a significant impact on carcasses and meat quality. During transport, animals are exposed to various factors which represent stress. These are deprivation of feed and water, loading and unloading, transport (conditions on the vehicle, driving style), unknown environment and unknown animals. Weight loss is a consequence of fasting and injuries in such a case, more damaged tissue has to be trimmed. Bruises and injuries are the result of incorrect loading and unloading, insufficient or too high density of animals, inadequate equipment on the vehicle, the presence of horns and inadequate driving. Stress is also the main factor responsible for the appearance of dark, firm, dry meat. All of the above factors come to terms with longer transport. If the welfare of animals is ensured during transport, the animals will also be calmer and unnecessary damage and deterioration of meat quality will not occur.
