Abstract
Kruh in peciva vedno vsebujejo 4 osnovne sestavine: moko, vodo, sol in kvas ali droži. To je definirano kot pred-testo ali temeljno testo, ki ga sestavljajo moka, voda in mikroorganizmi (glive kvasovke, bakterije mlečnega kisanja ali bakterije ocetnega kisanja (acetobacteraceae).
