Značilnosti pridelave grozdja sorte 'Refošk' in kakovost vina teran PTP

Abstract
Vinska trta (Vitis vinifera L.) sorte 'Refošk' je lokalna in udomačena sorta, ki se tradicionalno goji tudi v vinorodnem okolišu Kras. Najznačilnejša gojitvena oblika na Krasu je višja gojitvena oblika, tako imenovani kraški latnik, vendar, zaradi številnih pomanjkljivostih samega latnika (draga armatura, prekrivanje mladik in zasenčenje grozdja, pojav bolezni, oteženo varstvo itn.) se danes že uvajajo nove gojitvene oblike, največkrat guyot, ki dajejo odlične rezultate. V vinorodnem okolišu Kras se v izogib pretiranemu izhlapevanju vode iz tal priporoča obdelovanje tal oziroma rahljanje tal do petkrat letno. Razširjenost pridelave grozdja sorte 'Refošk' in vina teran PTP na Krasu v obdobju od 2006 do 2020 smo ugotavljali s podatki iz Registra pridelovalcev grozdja in vina ter arhiva Kmetijsko gozdarskega zavoda Nova Gorica. S podatki smo želeli ovrednotiti povprečno kakovost grozdja in vina iz sorte 'Refošk'. Sorta 'Refošk' zaokrožuje 75 % površin kraških vinogradov. V zadnjem desetletju se je pridelava sorte 'Refošk' na Krasu zmanjšala za kar 7 %. Povprečno kakovost grozdja sorte 'Refošk' v obdobju 2006-2020 bi lahko opisali kot: povprečna masa 100 jagod okrog 222,2 g, povprečna vsebnost sladkorjev 16 °Brix, 14,7 g/l skupnih kislin in 8,8 g/l povprečna vsebnost jabolčne kisline. V obdobju 2006-2020 je povprečno največjo vsebnost alkohola 11,9 vol. % imelo vino izbrani teran PTP, sledi vino refošk z 11,7 vol. % in teran PTP z 11,6 vol. %. Povprečno največjo vsebnost mlečne kisline je v obdobju 2006-2020 imelo vino izbrani teran PTP (2,2 g/l), sledi vino teran PTP (2,1 g/l). Povprečno največjo vsebnost reducirajočih sladkorjev (3,6 g/l) je v taistem obdobju imelo vino refošk, sledi vino izbrani teran PTP z 1,6 g/l in teran PTP z 1,5 g/l.

Title:Characteristics of 'Refošk' grape production and quality of wine teran PTP
Abstract:
The grapevine (Vitis vinifera L.) of the 'Refošk' variety is a local and domesticated variety traditionally grown also in the winegrowing district Kras. The most typical breeding form in the Karst is the higher production form, the so-called Karst latnik, however, due to the numerous shortcomings of the latnik itself (expensive reinforcement, covering of young stock and shading of grapes, the emergence of diseases, difficult protection, etc.), new forms of cultivation are already being introduced, most often Guyot, which give excellent results. In order to avoid excessive evaporation of water from the soil, the Karst wine-growing region recommends tillage or soil loosening up to five times a year. The prevalence of the grape production of the 'Refošk' variety and wine production of teran PTP wine in the Kras in the period from 2006 to 2020 was determined using data from the Register of Grape and Wine Growers and the Archives of Institute of agriculture and forestry Nova Gorica. According to the obtained data, we evaluated the average quality of grapes and wine from the 'Refošk' variety. The variety 'Refošk' covers 75 % of the Kras winegrowing district. In the last decade, the production of the 'Refošk' variety in the Kras has decreased for 7%. The average quality of grapes of the 'Refošk' variety in the period 2006-2020 could be described as: average weight of 100 berries around 222.2 g, average sugar content 16 °Brix, 14.7 g/l total acidity and 8.8 g/l average malic acid content. In the period 2006-2020, the highest average alcohol content of 11.9 vol.% was in the selected Teran PTP wine, followed by Refošk wine with 11.7 vol.% and teran PTP with 11.6 vol. %. The highest average lactic acid content in the recorded period was in the selected Teran PTP wine (2.2 g/l), followed by the Teran PTP wine (2.1 g/l). In the period 2006-2020, Refošk wine had the highest average content of reducing sugars (3.6 g/l), followed by selected Teran PTP wine with 1.6 g/l and Teran PTP with 1.5 g/l.
