Abstract
S poskusom v okviru magistrskega dela smo želeli ugotoviti, kateri ampelotehnični ukrepi bi lahko bili v prihodnosti najprimernejši za zakasnitev zorenja grozdja. V poskus smo vključili tri obravnavanja, in sicer kontrolo (K), pozno zimsko rez (PZR) in zgodnje vršičkanje mladik (ZV), ki smo jih izvedli na štirih sortah, 'Malvazija', 'Zeleni sauvignon', 'Fleurtai' in 'Merlot Kanthus'. Med rastno dobo 2022 smo na trtah beležili fenofaze in merili rastni potencial, stehtali maso grozdja, 100-tih jagod in lesa, izmerili vsebnost topne suhe snovi (TTS), titracijskih in skupnih kislin, pH, vsebnost skupnih fenolov in indeks jagod CIRG ter indeks Ravaz. Iz grozdja sorte 'Malvazija', glede na obravnavanje, smo ločeno pridelali vino, ki smo ga analizirali z analizatorjem Winescan. Na trtah PZR smo ob trgatvi, pri vseh proučevanih sortah stehtali značilno najmanjšo maso 100-tih jagod (127,0±3,7 g), najmanjšo vsebnost TTS pri sorti 'Malvazija' (21,5±0,7 °Brix), največjo vsebnost titrabilnih kislin pri sortah 'Malvazija' (2,44±0,06 g/l) in 'Zeleni sauvignon' (4,32±0,18 g/l) in skupnih kislin pri sortah 'Malvazija' (3,31±0,05 g/l) in 'Merlot Kanthus' (5,60±0,09 g/l) ter značilno najnižji pH (3,57±0,11) pri sorti 'Malvazija'. Rezultati kažejo, da pozna zimska rez zamakne zorenje grozdja.

Title:
The impact of ampelotehnic measures on ripeness delay and grape and wine quality of selected grapevine varieties (Vitis vinifera)
Abstract:
We wanted to find out which ampelotechnical measures are best suited to delaying the ripening of grapes in the future by conducting an experiment as part of our Master's thesis. We included three treatments in the trial: control (C), late winter pruning (LWP) and early shoot prunning (EST) which we carried out on the grapevine varieties, 'Malvazija', 'Zeleni sauvignon', 'Fleurtai' and 'Merlot Kanthus'. During the 2022 growing season, we recorded the phenophases and measured the growth potential, weighed the mass of grapes, 100 berries and wood, measured the total of soluble solids (TSS) content, titratable and total acidity, pH, total phenolic content and CIRG index, as well as the Ravaz index. We produced wine from grapes of the 'Malvazija' variety, we produced wine, which we analyzed using Winescan. In the PZR vines, we measured the significantly lowest mass of 100 berries at harvest (127.0±3.7 g), the lowest TTS content in the 'Malvazija' variety (21.5±0.7 °Brix), the highest titratable acidity content in the varieties 'Malvazija' (2.44±0.06 g/l) and 'Zeleni sauvignon' (4.32±0.18 g/l) and the total acidity in the varieties 'Malvazija' (3.31±0.05 g/l) and 'Merlot Kanthus' (5.60±0.09 g/l) as well as the clearly lowest pH value (3.57±0.11) in the variety 'Malvazija'. The results show that we observed a delay in the grape ripening in the PZR treatment.
