Vpliv z antioksidanti bogate prehrane v vrtcih na oksidativni stres pri zdravih otrocih

Abstract
V Sloveniji je v vrtce vključenih več kot 90 % 4–6-letnih otrok, kjer z obroki zaužijejo do 75 % dnevnih energijskih in hranilnih potreb. Glavni namen raziskovalnega dela je bil raziskati, ali lahko 10-dnevna, z antioksidanti bogata vrtčevska prehrana prispeva k znižanju označevalcev oksidativnega stresa pri zdravih otrocih. V raziskavo smo vključili 57 zdravih otrok v starosti 5–6 let, iz 6 vrtcev in jih randomizirali v prototipno (n=40; 4 vrtci) in kontrolno skupino (n=17; 2 vrtca). Na podlagi kemijske analize skupne antioksidativne kapacitete, vsebnosti energije, makrohranil in izbranih elementov v posameznih 5-dnevnih vrtčevskih obrokih, na podlagi s spletnim orodjem za ocenjevanje prehrane (OPKP) ovrednotene hranilne vrednosti 7-dnevnih tehtanih prehranskih dnevnikov iz vrtca in izven vrtca in na podlagi laboratorijskih analiz vzorcev urina pred in po intervencijski prehrani ter vzorcev krvi po intervencijski prehrani smo primerjali prispevek z antioksidanti bogatih vrtčevskih obrokov (prototipni obroki) s prispevkom kontrolnih vrtčevskih obrokov, na označevalce oksidativnega stresa pri udeležencih. Rezultati raziskave so pokazali, da je dobro načrtovana in natančno izvedena vrtčevska prehrana bogata z antioksidanti, v primerjavi s kontrolno vrtčevsko prehrano, prispevala k bolj optimalnim dnevnim vnosom zdravih skupin živil pri udeležencih, k bolj optimalni prehranski kakovosti pripravljenih obrokov in prispevala k visokemu skupnemu vnosu prehranskih antioksidantov pri udeležencih raziskave. Vse to se je odrazilo v signifikantnem znižanju 8-izo-15-prostaglandina-F-2 alfa v urinu udeležencev prototipne skupine po končani intervenciji in v signifikantno negativni korelaciji med vnosom prehranskih antioksidantov in serumskimi označevalci oksidativnega stresa. Naše ugotovitve močno spodbujajo ponujanje z antioksidanti bogate prehrane v vrtcu, zaradi njenega potencialnega prispevka k varovanju zdravja.

Title:The effect of antioxidant-rich kindergarten diet on oxidative stress in healthy children
Abstract:
In Slovenia, over 90 % of 4–6-year-old children are enrolled in kindergartens, where they consume up to 75 % of their daily energy and nutritional needs. The main purpose of the current research was to evaluate whether 10-day, antioxidant-rich kindergarten meals can contribute to the reduction of oxidative stress biomarkers in healthy children. The study included 57 healthy children aged 5–6 years from 6 kindergartens, randomized into a prototype group (n=40, n=4) and a control group (n=17, n=2). Based on the chemical analysis of the total antioxidant capacity, energy content, macronutrients, and selected elements in individual 5-day kindergarten meals, analyses of consecutive 7-day dietary records inside and outside kindergarten, using a dietary assessment tool (OPEN), and based on laboratory analyses of urine samples before and after the intervention diet, as well as blood samples after the intervention diet, we compared the contribution of the antioxidant-rich kindergarten meals (prototype meals) with the contribution of control kindergarten meals on oxidative stress biomarkers in participants. The results showed that a well-designed and precisely executed antioxidant-rich kindergarten meals contributed to a more optimal intakes of healthy food groups in the participants, enhanced the nutritional quality of prepared meals, and contributed to a higher total intake of dietary antioxidants in healthy participants. All this was reflected in a significant decrease in 8-iso-15-prostaglandin-F-2 alpha in the urine of prototype group participants after intervention and in a significant negative correlation between the intake of dietary antioxidants and serum markers of oxidative stress. Our findings support the provision of antioxidant-rich foods in kindergartens due to their potential health-protective contribution.
