Abstract
V okviru diplomske naloge smo raziskali problematiko bakterij Bacillus cereus ter njihove tvorbe biofilmov v mlekarski industriji z namenom raziskati potencialne strategije nadzora. Povod za raziskovanje je bilo opravljanje prakse v mikrobiološkem laboratoriju podjetja Incom d.o.o., kjer je bil eden izmed parametrov analize mikrobiološke ustreznosti živil tudi določanje prisotnost bakterij B. cereus. Te bakterije so po Gramu pozitivne, ki zaradi tvorbe spor, sposobnosti močnega pritrjenja, tvorbe toksinov in zunajceličnega matriksa, predstavljajo izziv v obratih predelave mleka predvsem v povezavi z biofilmi. Trenutno najučinkovitejša strategija nadzora bakterij B. cereus je njihovo odstranjevanje z uporabo sistema čiščenja CIP s kemijskih sredstvi NaOH ter HNO3 pri temperaturi 65 °C. Vendar so raziskave že usmerjene v inovativne strategije nadzora z uporabo protimikrobnih premazov in kemijskih sredstev (npr. natrijev hipoklorit, vodikov peroksid, ozon, perocetna kislina), z vključitvijo fagov, ultrazvoka, encimov ter predvsem kombinacijo vseh teh postopkov v tehnologiji ovir. Slednje so v literaturi že uporabljanje pri nadzoru ter zmanjševanju prisotnosti drugih bakterij, bakterije B. cereus pa še vedno predstavljajo izziv, predvsem zaradi svojih odpornih oblik v biofilmu in tvorbe spor.

Title:Problems with bacterial biofilms of Bacillus cereus in dairy industry and control strategies
Abstract:
As part of my thesis, we examined the scientific literature in the field of the bacteria Bacillus cereus and their biofilm formation in the dairy industry to explore potential control strategies. The reason for the research was the practice in the microbiological laboratory of Incom d.o.o., where one of the parameters of the analysis was the presence of B. cereus bacteria. These bacteria are Gram-positive, which pose a challenge to the dairy industry due to sporulation, ability of strong adhesion, formation of toxins and extracellular matrix, especially in connection with biofilms. Currently, the most effective removal is the use of the CIP cleaning system with the chemical agents NaOH and HNO3 at 65 °C. In the future, it would be interesting to investigate the efficacy of using antimicrobial coatings and chemicals (e.g., sodium hypochlorite, hydrogen peroxide, ozone, peracetic acid), involving phages, ultrasound, enzymes and a combination of all of these in the hurdle technology. The latter have been used in the literature to control and reduce other bacteria, but present a challenge for the film-forming and sporogenic B. cereus.
