The influence of harvesting date on fruit quality of three cultivars ('Burlat', 'Kordia', and ‘Regina’) of sweet cherry (Prunus avium L.) was investigated in 2016. Sampling of particular cultivar started when fruit colour turned to light red and repeated every three to four days. Four measurement terms were performed for 'Burlat’, 3 terms for 'Kordia' and only 2 terms for 'Regina' due to attack of Drosophila suzukii. At each sampling date 20 fruit were randomly picked from previously selected 3 trees per cultivar. The following variables were measured in laboratory: fruit dimensions (height, width, thickness), fruit weight, skin colour, flesh colour, firmness, soluble solids content, and content of titratable acids. Our results show that fruit dimensions significantly increased with ripening in all cultivars. The fruit weight also significantly increased. During the ripening process, the skin colour turned into dark red. Fruit of 'Burlat' and 'Kordia' cultivars became significantly softer. The differences in colour of flesh were noticed in 'Burlat' and 'Kordia'. The soluble solids content was increased in all culitvars but totratable acid content significantly decreased only in 'Burlat'.
