Abstract
Namen dela je bilo raziskati v čem se seneno mleko po sestavi razlikuje od konvencionalnega mleka. Vzorce smo vzeli iz dveh kmetij na Gorenjskem. Na prvi kmetiji se ukvarjajo z živinorejo na tradicionalen način, kjer obrok za krave molznice temelji na koruzni in/ali travni silaži, na drugi kmetiji pa obrok za krave molznice sestavlja večinoma le mrva, poleti pa paša. Zanimala nas je sestava mleka, vsebnost določenih kompoment tako v vzorcu senenega kot v vzorcu konvencionalnega mleka. Naredili smo analizo na vsebnost maščobnih kislin in ugotovili, da ima seneno mleko ugodnejšo maščobnokislinsko sestavo kot konvencionalno mleko. Seneno mleko vsebuje več esencialnih maščobnih kislin kot konvencionalno mleko. Razmerje med n-6 in n-3 maščobnimi kislinami je v vzorcu senenega mleka bolj ugodno. Zanimala nas je tudi kakovost doma pridelane krme, ki so jo živali dobivale v obroku, zato smo naredili tudi analizo krme. Analizirali smo vzorec sveže trave oziroma paše, na kateri je temeljil poletni obrok na kmetiji, kjer pridelujejo seneno mleko. V analizo smo vključili tudi mrvo, s katero živali krmijo ko ni pašne sezone. Izračunali smo neto energijo za laktacijo in vzorce primerjali z merili za kakovostne razrede. Ugotovili smo, da je mrva dobre kakovosti, kakovost sveže paše pa je bila znotraj povprečja, ki velja za Slovenijo.

Title:
The differences in composition of hay milk and conventional milk
Abstract:
The purpose of the work was to explore the difference in composition of hay milk and conventional milk. We took the samples from two farms in the Gorenjska region. On the first farm they are deal with livestock farming in the tradicional way, where the meal for dairy cows consists of corn or grass silage, on the other farm the meal for dairy cows consists of hay and fresh grass in the summer. We were interested in the composition of milk and the content of individual component in the sample in hay and conventional milk. We analysed the fatty acid content and found that hay milk contain more essential fatty acid than conventional milk and also the ratio n-6:n-3 was more favourable in hay milk. We were interested also in the quality of home produced forage, which the cows received in the meal, so we analysed the hay and the fresh grass. We calculated NEL (net energy for lactation) and samples were compared with the criteria for quality classes. We found that the quality of hay is good and fresh grass was around the averege for Sloveina.
