Abstract

Title:The return of edible wild growing plants to every day nutrition
Abstract:
I intend to study the usage of wild growing plants in every day nutrition. I am interested in knowledge of users of wild plants as a part of the newest trend of rediscovering of the old recipes and wild ingredients, their perception of edible wild growing plants, how, how much and why they use them in food preparation. Today, we are reintroducing the use of wild plants in nutrition that were on the menu mainly in war and deficiencies times (for example wild dendelion, wild garlic, aspargus, horse radish, hops, mushrooms, spruce buds, forest berries and other forest fruits). I'm interested in revitalized process of »domestication« of wild plants as part of extensive and complex modern eco- movement or the rediscovery of hidden treasures of nature. I intend to explore the motives for intervening in this type of nutrition. I assume that this are besides the desire for a healthier, more natural, organic food, as a substitute for contaminated industrial food, also recreation, a fashion trend, new or old beliefs in the healing power of nature and an economic aspect. I am also interested in cultural- related differences, sociodemographic dimensions as accelerators or inhibitors of this new practice.
