Human nutrition has become a subject of scientifi c studies only a few decades ago. In this article we focus on the determinants of eating behavior and on eating as a motive. We discuss diff erent models of food choice: developmental, cognitive and psychophysiological. We describe the role of learning in the eating process and the relation between food and emotions, concentrating on emotional eating. Th rough all the chapters we relate to the issue of healthy eating and the importance of it to an individual's optimal mental and physical functioning.
