This proof-of-concept study evaluated integrated red-green-blue (RGB) and ultraviolet-induced fluorescence imaging combined with grey-level co-occurrence matrix (GLCM) texture analysis for monitoring storage-related changes. One cabbage head was stored for 14 days at 25 ± 1 °C and 65–70 % relative humidity and imaged daily under fixed conditions. Mean channel intensities and GLCM contrast, correlation, energy, and homogeneity were extracted from manually delineated regions of interest. Mean RGB intensity declined sharply after day 10. RGB- and UV-derived contrast increased from 1.69 and 1.49 on day 1 to 3.63 and 3.35 on day 10, while homogeneity reached minima of 0.697 and 0.735, respectively. Joint trajectories indicated four exploratory phases: early response (days 1–4), accelerated response (days 5–8), peak-to-transition response (days 9–11), and late response (days 12–14).
