The thesis deals with the production and use of buckwheat (Fagopyrum esculentum Moench) in the world and Slovenia. Despite the difference in botanical classification, buckwheat is often included in the same group as cereals due to their similarity in production and use. In Slovenia, the earliest written mention of buckwheat dates back to 1426. At that time, the growing of buckwheat spread widely in order to secure food sufficiency, however, it was soon substituted by more productive and richer crops such as corn and wheat.Nonetheless, there has been a lot of interest in buckwheat in recent years because people have become dissatisfied with unvaried and industrially prepared food. Buckwheat often reminds people of their childhood and the good old times. With the help of statistics, I analyzed the areas planned for buckwheat growing and the amount of buckwheat produce in the world and Slovenia. In the world, buckwheat fields are expanding, which indicates that people are becoming increasingly more aware of what they eat. The same is true for Europe and Slovenia. In my opinion, there is a lot of demand for buckwheat because of its healthy qualities, therefore, people are more conscious of the importance of its production. China, Russia and Ukraine are the largest producers of buckwheat in the world. China produces approximately 1,200.000 tonnes of buckwheat annually, meanwhile Slovenia produces close to 3.225 tonnes. In Slovenia, 3,475 hectares of land are intended for buckwheat growing. On the surveyed farms, there are usually from 4 to 7 members from the age 60 to 69. The socio-economic status of the farm is a mixed farm as at least one of the members is employed outside the field of agriculture. Because of a healthy diet and cleaner environment, the majority have decided for anecological approach to growing. Most of the surveyed farms have from 1 to 10 hectares of arable land with up to 1 hectare intended for buckwheat. The average harvest per hectare is 1 tonne. Buckwheat is sowed as a stubble crop, frequently after cereals. The most commonly used variety is Darja. Birds and forest animals present the most issues for buckwheat growing. Buckwheat is known as a plant by 67 surveyed farmers. Most respondents (66) know about buckwheat bread. The most recognizable dish is buckwheat mash (69 respondents). Meals that include buckwheat are most often lunches (23 respondents). Most respondents (56) buy buckwheat products in stores. Most respondents (23) use organic products.
