In diploma thesis, we have described the content of furanocoumarins in different types of vegetables and fruit, which factors influence the increase in their content and what risk they pose to health. Previous studies show that the highest content of furanocoumarins is found in the families of Apiacae and Rutaceae, mainly celery, parsnip and citrus fruits. Important technological approaches that follow cultivation are proper storage and processing of the crop since in the event of an inappropriate storage temperature and tissue damage the content of furanocoumarins increases considerably. Study of furanocoumarins is very significant since they are found on our menu daily and have direct effects on human health. Some studies indicate their carcinogenicity and occurrence of phytophotodermatitis, in this respect the most alarming being their rapid absorption and distribution across the body. According to some studies conducted on animals furanocoumarins appear in plasma after 2 to 15 minutes and are possible to detect in liver, kidneys, adrenal glands, blood, intestines, fat, muscles and skin. On the other hand some studies indicate their positive effects in treatment of certain forms of cancer.
